Since moving to Utah I have to admit I have been a little afraid to bake. Getting used to a new oven is no fun! And this one definitely had a learning curve, not to mention the drastic change in altitude. But today I said bye-bye to the scaredy cat and baked me some cupcakes.
I started browsing Foodgawker, where I usually start my search, and found mostly Irish Car Bomb cupcakes. Since these were actually for Preston's work, not just me, I thought a cupcake with alcohol might be frowned upon in the wound care clinic of the hospital. Then I came across these glorious cupcakes. Girl Scout Thin Mint Cupcakes. Yes, you read it correctly and the only thing that might have made these cupcakes even better would have been a thin mint stuck in the top. Try them, they are lovely.
I'm so glad these worked out well for you. I also made a yellow cupcake brushed with Baileys for syrup and a soft Baileys cream cheese filling and frosting for today. Thanks for trying them, and Happy St. Patrick's Day!
